I have never been so amped.

Update
I successfully made Pad See Eu from scratch. Without a wok. and with olive oil because I thought I bought grape seed oil, but actually bought white wine vinegar. Oh the joys of shopping internationally. ps. I determined it was vinegar by its boiling point! I love chemistry!

Today was my first full day of classes (Full, because last week I skipped classes because I was dropping them, or got lost in Copenhagen so helplessly that I actually missed an hour-long class meeting) and I am pretty excited, albeit scared for the semester. My Complexities of Cancer class is going to be exceptionally interesting, and I am hoping to expand on my IL-2 work for our final research...

Lesson 1: Danish People are Really Nice
So yesterday I moved from my apartment in Albertslund to another apartment nearer to the city. Its a cute little walk-up across the lake from Copenhagen. We have a gorgeous view of the lake which is currently frozen over and covered by little kids in snow suits ice skating and older Danes walking and CURLING! This time next week, I’ll be packing up the last of my belongings (because you know I’m never going to fit it all into my 2 lime green suitcases) and getting pumped for the biggest adventure of my life! I finally got my housing assignment tonight, and I will be living at the Danmarks Internationale Kollegium…a sprawling 512 room compound in the Copenhagian suburb of Albertslund....
